Abstract

Eighteen laboratories participated in a collaborative trial to evaluate an immunological method for the determination of papain in raw meat. The method tested was shown to be accurate and exhibited acceptable precision characteristics, and so can be recommended for use for the determination of papain in such samples. Tendemess is one of the most important qualities of meat, yet it is a quality that is subject to a wide variation not only from one animal to another but also between cuts of meat from the same animal.
