Abstract

MacrIr (Ministry of Technology, Torry Research Station, Aberdeen) A simplified electlophoretic melhod of identifying fish species is described. The method depends on the species-specificity of the separation patterns obiained on electrophoresis of the muscle proteins. Raw and partially cooked fish are identifled from the pattems given by the water-extnctable muscle myogens and cooked fish can be identilied from the patterns gi!en by the protein fragments extracted in 6 M urea solution.
