Abstract

London, E.C.3 The milk fat content ol rhe milk chocolate coating of a biscuit has been shown to decrease o er a pe od of time due to migration into the biscuit portion. The migration of fats has been shown to be two-way, and the implications are discussed. Follorving an official complaint that the milk chocolate coating on half- coated sweetmeal biscuits was deflcienr in milk fat. it uas suggested to the local authority concerned that a migration ol the milk fat might have occurred. Reverse migration from the coating into the biscuit u,as also suggested, though not investigated. and it is the effect ol both migrations on nrilk chocolate coatings that is the subject of this study.
