Abstract

I would like to preface my remarks with a brief description of the way in which the Codex Alimentarius works. The idea of codifying food standards origin- ated with the Codex Alimentarius Europeus in 1958. The attempt at codifica- tion was taken over by the Food and Agriculture Organisation and the World Health Organisation ofthe United Nations in the early sixties and was thereafter on a world basis, rather than exclusively European. Although the programme of work is run jointly by the two U.N.
