Abstract

SlNorns (City Analysfs Laboratory, Crofts Street, Ca iff) A gas-chromatographic method for deteimining butter fat in other’fats is described. Saponiflcation of the fat is followed by acidification and filtration to isolate the water soluble fatty acids. The amount of butter fat in fat mixtures is readily determined by the Reichert-Polenske-Kirschner process. However, the method is time-consuming, and needs a 5-g sample of the fat. A small-scale version of the method is useful but still requires 1 g of the fat, which is often more than is available.
